Gellan Gum

Gellan GumGellan gum is a water-soluble anionic polysaccharide produced by the bacterium Sphingomonas elodea (formerly Pseudomonas elodea). The gellan-producing bacterium was discovered and isolated by the former Kelco Division of Merck & Company, Inc. in 1978 from the lily plant tissue from a natural pond in Pennsylvania, USA. It was initially identified as a substitute gelling agent at significant lower use level to replace agar in solid culture media for the growth of various microorganisms. Gellan Gum is a widely used excellent hydrogel, thickener, suspending agent, rheology control agent, including food, cosmetics and personnel care, industrial and so on. Gelatin is an effective gelling agent even at low concentrations.

Gellan Gum-Low Acyl

Gellan Gum Low Acyl is a naturally occurring biopolymer derived from Pseudomonas elodea produced by the fermentation of hydrogen carbonate. It is a white or milky white powder. It is soluble in cold or hot water but insoluble in solvents.

Gellan Gum Low Acyl is a gelatin that provides excellent gelling power. It is widely used in excellent hydrogels, film formers, thickeners, rheology control agents, moisturizers, etc. in a wide range of applications such as foods and beverages, cosmetics, and pharmaceuticals.

Gellan Gum High Acyl is a naturally occurring biopolymer produced by the fermentation of carbohydrates by Pseudomonas elodea. It is a white or milky white powder. It is soluble in water but insoluble in solvents.

Gellan Gum High Acyl is a gellan gum that provides excellent thickening and suspending ability in aqueous systems. It is widely used in the fields of food and beverage, cosmetics, medicine, etc. It is an excellent thickener, suspending agent, stabilizer, rheology control agent, etc.

Application of gellan gum

1. Candy Jelly: Gellan gum is used in candy jelly to improve temperature stability even at high temperatures to prevent melting.

2. Ready-to-eat jelly: Gellan gum can be used to make ready-to-eat fruit jelly with various textures. Thermally stable hydrogels can be made with low acyl gellan gum. This product can be used to replace the konjac/carrageenan mixture. Softer texture jelly requires a combination of gellan gum.

3. Dairy products: High acyl gellan gum can be used in a variety of dairy products. It stabilizes proteins in acidic protein drinks. In neutral dairy products, high acyl gellan gum guns are used to suspend calcium, cocoa, chocolate and other minerals.

4.Fruit Beverage: Low acyl gellan gum provides a good pulp suspension in low concentration fruit drinks. Even in low viscosity products, the product can suspend pulp.

5. Gellan gum, when properly hydrated, can be used in ice cream and sorbet recipes that behave as a fluid gel after churning. The benefit of using gellan gum is that the ice cream or sorbet can be set in a dish of flaming alcohol or Heated with a propane torch without actually melting.

6. As a food additive, gellan gum was first approved for food use in Japan (1988). Gellan gum has subsequently been approved for food, non-food, cosmetic and pharmaceutical uses by many other countries such as US, Canada, China, It has an integrated part of the now defunct Orbitz soft drink. It is used as the gelling agent, as an alternative To gelatin, in the manufacture of vegan varieties of "gum" candies.

7. It is used in plant-based milks to keep plant protein suspended in the milk.
